New Delhi: Valentine's Day is the ideal opportunity to indulge in your cravings, whether sweet or spicy and enjoy the day with your loved ones. There are plenty of dishes that you can prepare to show someone how much you care. So, before you go out for your special dinner, or even if you are planning to celebrate at home, here are some snack recipes that you can try out:
1. Chicken Nuggets:
Ingredients:
- 1 cup all-purpose flour
- 4 tsp seasoned salt
- 1 tsp poultry seasoning
- 1 tsp ground mustard
- 1 tsp paprika
- 1/2 tsp pepper
- 2 pounds boneless skinless chicken breasts
- 1/4 cup canola oil
Preparation:
- Combine the first 6 ingredients in a large shallow bowl.
- Flatten the chicken to 1/2-inch thickness and cut it into 1-1/2-inch chunks.
- Add the chicken to the dish, a few pieces at a time, and turn to coat.
- Cook chicken in batches in a big skillet with oil until the meat is no longer pink for 6-8 minutes.
- Place the nuggets on tissue paper to soak the excess oil.
- Your nuggets are ready to be served
2. Strawberry Napoleons:
Ingredients:
- 1 (3.5 ounces) package of instant vanilla pudding and pie filling
- 1 cup cold 2% milk
- 1 ½ cups non-dairy whipped topping, thawed
- ½ (17.25 ounce) package of frozen puff pastry, thawed
- 1 pint fresh strawberries, thinly sliced
- ¼ cup confectioners' sugar
Preparation:
- Preheat the oven to 200°C. Fold in the whipped topping after combining the pudding mix and cool milk. Place in the refrigerator until ready to use.
- On a cool, lightly floured surface, unfold the pastry. Cut into three strips along the fold lines, then cut each strip into four equal pieces. Place on a baking sheet 2 inches apart.
- Bake for 15 minutes, or until golden brown, in a preheated oven. Cool after removing from the baking sheet.
- Divide the pastries into two layers, reserving the eight best-looking tops. Dollop the pudding mixture onto the bottom 8 layers.
- Top each with a layer of strawberries, a small amount of pudding, and another pastry layer.
- Spread with the remaining pudding mixture and strawberries, and top with remaining pastry layers.
- Sprinkle with confectioner's sugar.
- Your dish is ready to be served.
3. Strawberry Corn Salsa:
Ingredients:
- 2 cups fresh strawberries, chopped
- 2 cups grape tomatoes, chopped
- 1 package (10 ounces) of frozen corn, thawed
- 2 green onions, chopped
- 3 tablespoons minced fresh cilantro
- 1/3 cup olive oil
- 2 tablespoons raspberry vinegar
- 2 tablespoons lime juice
- 1/2 teaspoon salt
- Baked tortilla chips
Preparation:
- Combine the first 5 ingredients in a large mixing bowl.
- Whisk together the oil, vinegar, lime juice, and salt in a small bowl.
- Pour over the strawberry mixture and toss to coat.
- Refrigerate for 1 hour
- Serve with tortilla chips.
4. Mini Cheese Balls:
Ingredients:
- 1 package of softened cream cheese
- 2 cups shredded sharp cheddar cheese
- Toasted sesame seeds
- minced fresh rosemary and paprika
- Halved rye crisps
- rolled tortilla chips
Preparation:
- Combine all the cheese in a large mixing bowl.
- Form them into a shape of a ball and roll in selected toppings.
- Refrigerate for at least 8 hours or overnight.
- To serve, press a rye crisp or rolled tortilla chip into the top of each cheese ball.
