Not Really a Nut: A coconut, though often thought of as a nut, is botanically a fibrous drupe. Drupes are fruits with a hard, stony shell that encases the seed, like peaches or olives. Unlike true nuts, which don’t open to release their seeds, a coconut has a structure made up of three layers: the outer exocarp, the fleshy mesocarp, and the hard, woody endocarp that surrounds the seed.
