How to make tasty food without onion and garlic: Onion and garlic are not used in food at all in some Indian households, while some others refrain from using these in food during Navratris. People cannot imagine making tasty and nutritious Indian food without the usage of onion and garlic. Although they might be quite the perfect replacement, here are some things which could substitute onion and garlic without compromising much on taste.

Use Ginger and Chilly Paste:

It is recommended to use ginger paste while frying spices, as it infuses with spices to make your food aromatic. You could either add ginger paste on itself or mix it with a paste made of chilies, it all depends on how you and your family like it. .You should use it in the beginning after you add a tempering of cumin and asafoetida to the food.

Add Gram Flour:

You can use roasted gram flour to bring a rich flavour to vegetables. If are making dry curries, it is recommended to add a little roasted gram flour to it, as it helps enhance the taste of the curry. You can similarly use rice flour to make vegetables crispy.

While making thick gravy:

Onion paste is considered to be a necessity while making rich gravies for curries like Cottage Cheese Ball curry. However, you could substitute it by adding a bit of finely ground pre-soaked khus seeds. You could also use a paste made of pre-soaked cashews to make a thick gravy. Apart from this, you could also thicken the gravy by using crumbled milk solids or cottage cheese.

Tempering Raw spices:

If you want to make tasty food without onion or garlic, you could definitely use raw spices, as they taste different and interesting. However, if you realise that children are not too fond of it, you could tie them in a bundle and add it to the gravy. Along with this, you could also increase the taste by adding ghee or butter on top of vegetables or pulse curries. Mustard seeds, red chilies, and curry leaves, etc. can be used to temper the curries as per the requirement.
