Ingredients

  • 0.5 Cup Rajgira (amaranth) Flour
  • 4 Tablespoon Desi Ghee
  • 0.5 Cup Jaggery
  • 1 Cup Water
  • 2 Pinch Cardamom Powder
  • 1 Tablespoon Almonds
  • 1 Tablespoon Cashews
  • Saffron

Cooking Instructions

Step 1

Heat ghee in a non-stick pan or kadhai.

Step 2

Add Rajgira flour and roast it on low flame, stirring continuously until golden brown and aromatic. This may take 6–8 minutes.

Step 3

In a separate pan, melt jaggery in water over low heat. Do not boil. Strain if needed to remove impurities.

Step 4

Slowly pour the jaggery water into the roasted flour while stirring continuously to avoid lumps.

Step 5

Cook the mixture on low flame until it thickens and starts leaving the sides of the pan.

Step 6

Add cardamom powder, saffron (if using), and chopped nuts. Mix well.

Step 7

Serve hot, garnished with more dry fruits.
