Murgh Chatpata is a bold and flavourful Indian chicken dish known for its spicy, tangy, and aromatic profile that excites the palate with every bite. “Murgh” means chicken, and “Chatpata” refers to something tangy, spicy, and mouth-wateringly delicious — a perfect description of this vibrant dish that’s deeply rooted in North Indian Street food culture.

The dish features tender pieces of boneless chicken marinated in a lively blend of ginger-garlic paste, red chili powder, garam masala, and a generous squeeze of lemon or a dash of chaat masala for that signature tang. The marinade is left to infuse the chicken with layers of flavour, making each piece juicy, spicy, and aromatic.

Once marinated, the chicken is tossed in a light coating of corn flour and refined flour (maida, you can substitute it with besan) to create a crispy outer layer when fried. The chicken is then deep-fried or shallow-fried until golden and crunchy, with a tender and juicy center. The crispy coating locks in the robust flavors of the marinade, offering a satisfying bite every time.
