Jalebi is a comfort-dessert popular on the Indian subcontinent proves gift for all occasions. These spiral succulents are adored for their crunchy-golden texture that comes from drenching in a syrup that carries all the fragrances. This delicious dessert is made by deep-frying multil helices of maida, or all-purpose flour, and then stuffing into kewra or cardamom-flavored syrup. Ingredients

  • 1 Cup FOR SUGAR SYRUP: Sugar
  • 180 Milliliter Water
  • Half Lemon Juice
  • 0.5 Teaspoon Saffron Strands
  • 1 Cup FOR JALEBI: Refined Flour
  • 0.25 Cup Yogurt
  • 1 Teaspoon Vinegar
  • 0.5 Teaspoon Baking Powder
  • Ghee or Oil (For deep frying)

Cooking Instructions

Step 1

FOR SUGAR SYRUP: Put sugar in a small saucepan, add water and place it on medium flame.

Step 2

Once sugar gets dissolved, put lemon juice in it and stir well till it turns to a tendril-like consistency.

Step 3

Put saffron, mix, and switch off the flame. Keep aside to be used later.

Step 4

FOR JALEBI BATTER: Take refined flour in a pot, mix it properly with baking powder, vinegar, and yogurt, set it aside for 5-7 minutes.

Step 5

Slowly add ½ cup water through jerks, mix until no lumps are formed.

Step 6

Whip it well for 2 minutes to create optimum air in the prepared batter.

Step 7

FOR JALEBI: Pouch the prepared charge in a pastry bag or squeeze bottle with the nozzle if available.

Step 8

Heat up oil in a deep, wide pan to fry the jalebis and swirl the batter into spiral-like circular patterns outward to the innermost circle.

Step 9

Fry the jalebis till it becomes golden brown and take them out of the oil straight into the sugar syrup.

Step 10

Leave the jalebis in the syrup for 3-4 minutes. Take them out and place on a serving plate.

Step 11

Repeat the process with the remaining batter. Serve hot with jalebis.
