Mother’s Day is a beautiful reminder to put a halt, think, and give thanks to the women who have fashioned your existence into one filled with adorable love and care. Celebrated annually on the second Sunday of May, Mother's Day falls on May 11 in the year 2025. It's a perfect occasion to tell our mothers and mother figures how much they actually mean to you, not just through gifts or messages but through sincere gestures from the heart.

Making a meal for your mother on this special day of Mother's Day means much more than just food preparation; it conveys the feeling of love and gratitude. Prepare this wonderful fusion recipe promising a mixed expression of comfort, memory, and sheer indulgence from a single forkful – Masala Chai and Rusk Trifle Pudding.

This is ingenious, as it combines forbidden angles of the English trifle with the beloved Indian tastes of chai and rusks. The Masala Chai and Rusk Trifle Pudding is the one thing that would capture every mother's heart.

Ingredients

  • 4 Piece Rusk
  • 1 Cup Masala Tea
  • 100 Gram Milkmaid
  • 50 Gram Cooking Cream
  • 100 Gram Whip Cream

Cooking Instructions

Step 1

In a saucepan, combine full-fat milk, sweetened condensed milk (Milkmaid), and cooking cream. Heat the mixture over medium heat, allowing it to simmer gently. Add your masala chai blend to the mixture. Continue to simmer until the volume reduces by approximately one-third, concentrating the flavours. Remove from heat and set aside to cool to room temperature.

Step 2

In a chilled mixing bowl, whip the heavy cream until soft peaks form. Ensure the cream is well-chilled to achieve optimal whipping results.

Step 3

Place a layer of rusk at the base of your serving dish

Step 4

Generously pour the cooled masala chai infusion over the rusk, allowing it to soak thoroughly.

Step 5

Using a piping bag fitted with your desired nozzle, pipe a layer of the whipped cream mixture over the soaked rusk.

Step 6

Repeat the layering process, add another layer of soaked rusk, followed by a layer of whipped cream.

Step 7

Allow the assembled dessert to rest for a period, enabling the rusk to absorb the infused milk mixture fully.

Step 8

Garnish the dessert as per your preference. Suggestions include finely chopped pistachios, slivers of almonds, or a light dusting of cinnamon or cardamom powder.

Step 9

Serve chilled, ensuring the dessert has set properly for optimal flavour and texture.
