Ingredients

  • 2 Tablespoon Thai Green Curry Paste
  • 1 Can Coconut Milk
  • 1 Piece Bell Pepper
  • 1 Piece Carrot
  • 1 Piece Zucchini
  • 200 Gram Mushroom
  • 1 Tablespoon Soy Sauce
  • 1 Tablespoon Brown Sugar
  • 1 Cup Basil Leaves
  • 2 Piece Kaffir Lime Leaves (optional)
  • 2 Piece Thai Bird's Eye Chillies (optional)
  • 1 Cup Jasmine Rice
  • 500 Gram Tofu

Cooking Instructions

Step 1

Prepare Jasmine rice and set it aside.

Step 2

Take a large pan and heat vegetable oil in it over medium heat.

Step 3

Add green curry paste to the pan and saute for a few minutes.

Step 4

Add in the coconut milk and bring it to boil. Stir it well.

Step 5

Add in tofu and cook well of about 5 minutes. Keep on stirring occasionally.

Step 6

Add in the vegetables like bell pepper, zucchini, carrot, and mushrooms. Cook it and wait for the vegetables to become tender.

Step 7

Once the vegetables are cooked, add in soy sauce, brown sugar, and kaffir lime leaves.

Step 8

Add in the choice of herbs like Thai basil and chillies. Simmer the curry for 2-3 minutes.

Step 9

Serve the hot Green Thai Curry with jasmine rice and enjoy the flavourful meal.
