Bengali Pohela Boishakh 2025 — Know How To Prepare Authentic Bengali Shukto At Home

Ingredients

  • 1 Piece Bitter Gourd
  • 1 Piece Potato
  • 1 Piece Carrot
  • 1 Piece Raw Banana
  • 1 Piece Pumpkin
  • 2 Piece Green Chillies
  • 1 Tablespoon Ginger Paste
  • 1 Tablespoon Mustard Oil
  • 1 Teaspoon Panch Phoron
  • 1 Teaspoon Sugar
  • 1 Teaspoon Salt
  • 2 Tablespoon Milk
  • 2 Tablespoon Ghee
  • 2 Piece Bay Leaves
  • 1 Teaspoon Cumin Seeds
  • 2 Piece Dried Red Chillies
  • 1 Pinch Asafoetida

Cooking Instructions

Step 1

Wash and peel all the vegetables. Then, chop them into small pieces.

Step 2

Rub the bitter gourd with salt and keep it aside for about 10 minutes. This will remove the bitterness. After that, wash it properly.

Step 3

Take a pan and heat mustard oil in it. Add in cumin seeds, bay leaves, dried red chillies, and panch phoron. Let the ingredients splutter.

Step 4

Add in all the chopped vegetables except pumpkin into the pan and saute.

Step 5

Add turmeric powder, ginger paste, salt, and sugar. Mix everything well and cook for a while.

Step 6

Pour water in the pan and let it cover all the vegetables. Bring it to boil and simmer for about 15 minutes.

Step 7

Add the pumpkin pieces and cook for another 5 minutes. Add milk and little ghee for an enhanced flavour.

Step 8

Garnish your dish with fresh green chillies and serve it with rice.
