Adrak ki Aloo Gobhi is a comforting yet aromatic North Indian dry sabzi where fresh ginger takes centre stage. Unlike heavily spiced gravies, this preparation relies on the natural sweetness of potatoes, the nuttiness of cauliflower, and the sharp, warming fragrance of ginger to build depth of flavour. It is a perfect example of how Indian home cooking uses minimal spices but strong techniques to create balance and complexity.


Ginger, known for its digestive and anti-inflammatory properties, plays a dual role in this dish, first mellowed in the tempering and later added fresh as juliennes for a final burst of heat and aroma. The result is a sabzi that feels light on the stomach yet deeply satisfying, making it ideal for everyday meals as well as winter menus. The cooking method combines sautéing, gentle steaming (dum), and quick high-heat tossing. This allows the vegetables to retain their texture while absorbing the flavours of cumin, turmeric, coriander, and garam masala. The light roasting adds a subtle caramel note without making the dish oily or heavy.


Adrak ki Aloo Gobhi pairs beautifully with Makki di Roti, phulkas, or simple dal-chawal. It is wholesome, seasonal, and rooted in traditional cooking wisdom where spices are used not just for taste, but for warmth, digestion, and overall well-being. This dish reflects the modern health-forward approach as well, less oil, fresh aromatics, and slow, mindful cooking.

Ingredients

  • 2 Piece Potatoes (Cubed)
  • 3 Piece Cauliflower (florets)
  • 2 Tablespoon Fresh ginger (julienned & grated)
  • 3 Tablespoon Oil or ghee
  • 1 Teaspoon Cumin seeds
  • 1 Piece Green chilli
  • 1 Pinch Hing (asafoetida)
  • 0.5 Teaspoon Turmeric powder
  • 1.5 Teaspoon Coriander powder
  • 0.5 Teaspoon Red chilli powder
  • 0.5 Teaspoon Garam masala
  • Salt (to taste)
  • Fresh coriander (Chopped)
  • Lemon juice (a few drops)

Cooking Instructions

Step 1

Lightly blanch cauliflower florets in salted hot water for 2–3 minutes. Drain.

Step 2

Heat oil/ghee in a heavy kadhai. Add cumin seeds and let them crackle.

Step 3

Add hing and green chilli.

Step 4

Add half the ginger and sauté on low flame till aromatic.

Step 5

Add potatoes, turmeric, and salt. Cover and cook till 70% done.

Step 6

Add cauliflower, coriander powder, and red chilli powder. Toss gently.

Step 7

Cover and cook on low flame till vegetables are tender and lightly roasted.

Step 8

Add remaining ginger and garam masala. Toss on high flame for 30–40 seconds.

Step 9

Garnish with coriander and a squeeze of lemon. Serve hot.
