Holi is the festival of colours which is India's most colourful and joyful celebration. Characterised by innocent splashes of colours, merry get-togethers, and yummy sweets, Holi unites people to rejoice at love, togetherness, and spring's arrival. No Indian celebration is complete without feasting on traditional fare, and Holi is no exception. Amongst the various goodies made for the celebration, Gujiya has a special status.


Gujiya is a fried pastry filled with an opulent stuffing of mawa (khoya), dry fruits, and coconut, flavored with cardamom. This golden, crispy treat is a staple in every home during Holi. While the classic Gujiya remains an all-time favorite, food enthusiasts are now experimenting with new and innovative versions, giving a modern twist to this traditional sweet. One such creative fusion is Gujiya Gelato, a delightful combination of Indian and Italian flavours.


Gujiya Gelato transforms the flavour of Gujiya and mixes it into a creamy, smooth gelato, presenting an indulgent yet refreshing festival dessert. Served on its own as a dessert or accompanied with hot Gujiyas, this innovation is sure to amase your guests.

Ingredients

  • 2 Cup Full-fat milk
  • 0.5 Cup Condensed milk
  • 0.5 Cup Khoya (mawa)
  • 0.5 Teaspoon Cardamom powder
  • 0.25 Cup Chopped dry fruits (almonds, cashews, raisins)
  • 0.25 Cup Crushed Gujiya pieces

Cooking Instructions

Step 1

Heat khoya and milk in a saucepan over medium heat, stirring frequently to prevent burning.

Step 2

Heat until the mixture thickens to a creamy consistency.

Step 3

Mix in condensed milk and cardamom powder so that the flavors are well incorporated.

Step 4

Heat for a further few minutes and then remove from heat and cool to room temperature.

Step 5

After cooling, pour the mixture into an ice cream maker and churn until it is soft and airy.

Step 6

Fold in crushed pieces of Gujiya along with finely chopped dry fruits such as almonds, pistachios, and cashews, distributing them evenly.

Step 7

Pour the mixture into a freezer-safe container, smooth the top, and cover tightly to avoid ice crystal formation.

Step 8

Chill for a minimum of 4-6 hours until stiff.

Step 9

Serve chilled, garnished with additional dry fruits for crunch and flavor.
