Ho Fan Noodles is a beloved Cantonese dish that wins over hearts with its warm comfort, freshness of ingredients, and strong flavors. Traditionally prepared with broad, flat rice noodles named Ho Fan, the dish is characterised by a smooth texture that absorbs rich flavours of aromatic Asian sauces.
Here in this contemporary rendition, homemade eggless Ho Fan noodles are used, making the dish lighter yet still indulgent. The noodles are wok-tossed with bell peppers, onions, bean sprouts, jalapeños, and king chilli, giving a balance of crunch and heat. A smoky, spicy glaze is added with a drizzle of crispy chilli oil and a splash of soy sauce. Chives are included for a mild pungency, and the chosen protein, either egg with chicken or egg with prawns, adds richness and depth.

Ingredients
- BASE: Homemade eggless flat Ho Fan noodles (flat rice noodles)
- 0.25 Cup VEGETABLES AND AROMATICS: Bell Peppers, Sliced
- 0.25 Cup Bean Sprouts
- 0.5 Piece Medium Onion, Sliced
- 2 Piece Jalapeños, Sliced (adjust to spice preference)
- 1 Piece Small King Chilli, finely chopped (optional for extra heat)
- 1 Tablespoon Chives, chopped
- 2 Tablespoon SAUCE: Crispy Chilli Sauce
- 1 Tablespoon Soya Sauce
- PROTEIN (CHOOSE ONE): Egg + chicken, beaten and stir-fried
- Egg + prawns, stir-fried
Cooking Instructions
Prep the Noodles: If using fresh homemade noodles, separate and lightly oil them to avoid sticking. If using refrigerated noodles, briefly soak in warm water.
Cook the Protein: In a hot wok, scramble egg with chicken or prawns until cooked. Set aside.
Stir-Fry the Vegetables: Heat a tablespoon of oil in the same wok. Add onions, bell peppers, and jalapeños. Stir-fry on high heat for 1–2 minutes. Add bean sprouts, king chilli (optional), and chives. Toss briefly.
Combine: Add the noodles to the wok. Pour in soya sauce and crispy chilli sauce. Toss everything together on high heat until evenly coated and fragrant.
Finish And Serve: Add the cooked egg + chicken or egg + prawns back into the wok. Toss well. Serve hot, garnished with fresh herbs or a wedge of lime if desired.
