Ingredients
- 100 Gram Ragi (finger millet) flour
- 20 Gram Unsweetened cocoa powder
- 30 Gram Almond flour
- 40 Gram Coconut sugar or jaggery powder
- 25 Milliliter Coconut oil (melted)
- Warm water (as needed)
- 0.5 Teaspoon Vanilla extract
- 80 Gram Medjool dates (pitted)
- 30 Gram Tahini
- 20 Gram Sesame seed/Cocoa Nibs
Cooking Instructions
Prepare the Filling: In a blender, blend dates, tahini, and a pinch of salt until smooth and thick.
Transfer the mixture to the fridge for 10–15 minutes to firm up slightly. This will make it easier to handle during shaping.
Make the Outer Dough: In a mixing bowl, combine ragi flour, cocoa powder, almond flour, and coconut sugar.
Add coconut oil and vanilla extract; mix well until crumbly.
Gradually add warm water, kneading gently to form a soft dough.
Cover the dough and let it rest for 10 minutes.
Shape the Bites: Divide the dough into 12 equal portions and roll each into a ball.
Flatten each ball into a disc, spoon a small amount of the date-tahini filling in the center, and carefully seal the edges to form a smooth, round bite.
Chill & Coat: Roll the prepared bites in sesame seeds or crushed cocoa nibs for added crunch and flavor.
Chill in the refrigerator for 15–20 minutes to set.
