Ingredients

  • 2 Cup Lauki (peeled, deseeded, grated)
  • 2 Tablespoon Ghee
  • 4 Tablespoon Khoya
  • 5 Tablespoon Sugar
  • 2 Pinch Green Cardamom Powder
  • 8 Piece Cashews
  • 8 Piece Almonds
  • 1 Tablespoon Raisins
  • Few strands of saffron soaked in 1 tbsp warm milk

Cooking Instructions

Step 1

Peel and grate the bottle gourd. Squeeze out the excess water using your hands or a muslin cloth.

Step 2

Take a heavy-bottomed pan and heat ghee in it. Add in cashews, almonds, and raisins. Saute till they're golden and then set aside.

Step 3

In the same pan, add the grated lauki and cook on medium heat for 8–10 minutes, stirring frequently until the raw smell goes away.

Step 4

Pour in the khoya. Mix it well and cook on medium heat until the lauki absorbs the milk.

Step 5

Add sugar and mix thoroughly. Continue cooking and stir continuously.

Step 6

Stir in cardamom powder and add roasted dry fruits. Mix everything well.

Step 7

Add saffron milk for a richer aroma and slight golden hue.
