Quesadillas with Rainbow Salsa is a vibrant and flavourful Mexican dish that combines the cheesy, crispy goodness of quesdilla with the fresh salsa, that is loved by kids.
A quesadilla is a classic Mexican dish featuring a tortilla filled with cheese, often with spices, or veggies, and cooked until golden on a griddle. Traditionally made with a corn tortilla, flour tortillas can also be used for a softer texture.
Rainbow Salsa, a bright and nutritious blend of veggies or fruits that adds a burst of flavour and colour to the dish. This versatile dish can be enjoyed fresh or cooked, bringing a zesty twist to quesadillas while encouraging kids to try different tastes and textures.
Ingredients
- 200 Gram Shredded cheddar cheese
- 4 Piece Tortillas
- 10 Milliliter Olive oil or butter (for cooking)
- 100 Gram Red bell pepper, diced
- 100 Gram Yellow bell pepper, diced
- 100 Gram Cucumber, diced
- 100 Gram Tomatoes, diced
- 50 Gram Red onion, finely diced
- 50 Gram Sweet corn kernels
- 10 Gram Fresh cilantro, chopped
- 1 Gram Lime (juice only)
- 5 Gram Salt
- 2 Gram Black Pepper
Cooking Instructions
For Rainbow Salsa: In a large mixing bowl, combine the red and yellow bell peppers, cucumber, tomatoes, red onion, and sweet corn.
Add the chopped cilantro and lime juice, then season with salt and pepper to taste.
Mix everything well, cover, and set aside to let the flavours meld.
Assembling: Place a large skillet or griddle over medium heat and add a small amount of oil or butter.
Place one tortilla in the skillet and sprinkle 100g of shredded cheese evenly across the surface.
Place another tortilla on top and press down lightly.
Cook for about 2-3 minutes on each side or until the tortilla is golden and the cheese is melted.
Transfer the cooked quesadilla to a cutting board and slice into wedges.
Serve warm with the fresh rainbow salsa on the side.
