The signature plum cake follows its traditional philosophy closely. The process begins weeks in advance, with dried fruits, nuts, spices, juices, and spirits coming together to mature slowly. This resting period allows flavours to deepen and mellow, creating complexity without excess sweetness. The ceremony itself is participatory by nature, an inclusive moment where hands come together to mix, fold, and prepare the base that will later transform into the finished cake. It is less about spectacle and more about continuity, echoing how Christmas baking has been passed down through generations.


What sets this recipe apart is its restraint. There is no artificial colouring, no rush to bake, and no overpowering dominance of alcohol. Instead, freshly ground spices such as cinnamon, nutmeg, and cardamom bring warmth and aroma, while a carefully balanced soaking mix ensures moisture and depth. Local influences quietly shape the final result, cashews, regional spices, and sourcing choices that reflect Goa’s culinary landscape without straying from the classic structure of a plum cake.

Ingredients

  • 700 Gram Butter
  • 850 Gram Castor Sugar
  • 200 Gram Brown Sugar
  • 20 Piece Eggs
  • 1.5 Kilogram Mixed Fruits (soaked)
  • 200 Gram Bread Crumbs
  • 600 Gram Maida (Flour)
  • 250 Gram Mixed Fruit Jam
  • 150 Milliliter Brandy
  • 20 Gram Baking Powder
  • 8 Gram Cardamom Powder
  • 2 Gram Nutmeg Powder
  • 8 Gram Cinnamon Powder
  • 7 Milliliter Caramel Colour

Cooking Instructions

Step 1

Cream the butter, castor sugar, and brown sugar together until light and fluffy.

Step 2

Add the eggs one at a time, mixing well after each addition.

Step 3

Incorporate the caramel colour, mixed fruit jam, and brandy. Mix until well combined.

Step 4

Sieve the maida, baking powder, and all powdered spices together. Add breadcrumbs and mix.

Step 5

Gently fold the dry mixture into the creamed mixture.

Step 6

Add the soaked mixed fruits and mix lightly to avoid overbeating.

Step 7

Pour the batter into lined baking moulds.

Step 8

Bake at 160°C for 30–40 minutes, or until a skewer inserted comes out clean.

Step 9

Allow the cake to cool completely, demould, and brush with milk or water if desired.
