Ingredients
- 700 Gram Butter
- 850 Gram Castor Sugar
- 200 Gram Brown Sugar
- 20 Piece Eggs
- 1.5 Kilogram Mixed Fruits (soaked)
- 200 Gram Bread Crumbs
- 600 Gram Maida (Flour)
- 250 Gram Mixed Fruit Jam
- 150 Milliliter Brandy
- 20 Gram Baking Powder
- 8 Gram Cardamom Powder
- 2 Gram Nutmeg Powder
- 8 Gram Cinnamon Powder
- 7 Milliliter Caramel Colour
Cooking Instructions
Cream the butter, castor sugar, and brown sugar together until light and fluffy.
Add the eggs one at a time, mixing well after each addition.
Incorporate the caramel colour, mixed fruit jam, and brandy. Mix until well combined.
Sieve the maida, baking powder, and all powdered spices together. Add breadcrumbs and mix.
Gently fold the dry mixture into the creamed mixture.
Add the soaked mixed fruits and mix lightly to avoid overbeating.
Pour the batter into lined baking moulds.
Bake at 160°C for 30–40 minutes, or until a skewer inserted comes out clean.
Allow the cake to cool completely, demould, and brush with milk or water if desired.
