How To Make Eggless Mayonnaise: A Simple Guide

Ingredients To Make Eggless Mayonnaise:

  • 1/4 cup aquafaba (chickpea liquid) or silken tofu
  • 1 cup vegetable oil (or any neutral oil)
  • 1 tablespoon mustard (Dijon or yellow)
  • 1 tablespoon apple cider vinegar or lemon juice
  • Salt to taste

Steps To Follow:

1. Blend The Base Ingredients: Start by adding aquafaba or silken tofu into the blender. Add mustard and apple cider vinegar or lemon juice. Blend these ingredients on high until the mixture is completely smooth and creamy. This will the base of the eggless mayonnaise.

2. Incorporate Oil: With the mixer running, slowly pour in vegetable oil. It is importamt to add the oil steadily so that it emulsifies with the base ingredients properly. Continue until the mixture till it reaches the desired consistency.

3. Season To Taste: Once the mayonnaise has reached the desired consistency, add salt into it according to your taste. You can also season the mayonnaise with flavours like garlic powder, paprika, or herbs. Blend once again to ensure that the spices are evenly distributed.

4. Store Properly: Carefully transfer the eggless mayonnaise into a clean jar and close the lid tightly. Make sure to leave some space at the top as the mixture may spread a little. Seal the jar and refrigerate.

5. Use and Enjoy: Your homemade mayonnaise is now ready. It can be stored in the refrigerator for upto a week. You can enjoy it as a dip, dressing for salad, or a spread in your sandwiches.
