Mango Recipes For Summer: As the temperatures soar higher, a plate of juicy mangoes, lychees or watermelons can bring relief like no other thing. Known as the 'King of Fruits', mangoes are not only found in numerous varieties, but they also offer a myriad of options when it comes to consuming them. Indulge in the vibrant flavours of summer with a variety of mango-inspired delights that will elevate your seasonal experience and enjoy the tropical and widely loved Mango-inspired desserts as the sun shines brighter than ever.


1. Mango Tart (By Chef Dheeraj Mathur, Cluster Executive Chef, Radisson Blu, Kaushambi, Delhi NCR)


Ingredients:


For the crust:



  • 1+1/2 cups all-purpose flour

  • 1/2 cup unsalted butter (chilled and cubed)

  • 1/4 cup granulated sugar

  • Pinch of salt

  • 1 egg yolk

  • 2 tablespoons cold water


For the filling:



  • 3 ripe mangoes

  • Peeled and sliced

  • 1/2 cup mango puree (optional, for extra mango flavour)

  • 1/4 cup granulated sugar

  • 2 tablespoons cornstarch

  • Juice of 1 lime


Method:


Prepare the crust:



  • In a food processor, combine all the ingredients then pulse until the dough comes together. Turn out the dough onto a lightly floured surface and knead gently until smooth. Flatten the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

  • Preheat your oven to 375°F (190°C).

  • Roll out the dough, carefully transfer it to a greased tart pan, pressing it gently into the bottom and sides. Trim any excess dough. Line the tart shell with parchment paper and fill it with pie weights or dried beans. Bake in the preheated oven for 15-20 minutes, allow the crust to cool completely before filling.


Prepare the filling:



  • In a saucepan, combine the mango puree (if using), sugar, cornstarch, and lime juice. Cook over medium heat, stirring constantly, until the mixture thickens. Remove from heat and let it cool slightly.


Assemble the tart:



  • Arrange the sliced mangoes in the cooled tart shell in an overlapping pattern.

  • Pour the mango filling over the sliced mangoes, spreading it evenly.

  • Refrigerate the tart for at least 1 hour to set.

  • Garnish with fresh mint leaves and whipped cream, if desired, before serving.

2. Mango Pudding (By Chef Kunal Kapur, Saffola Oils)


Ingredients:



  • 2 cups or 400 gms of diced Mangoes  

  • ½ cup of Sugar

  • 1 cup of Milk  

  • ¼ cup of Custard Powder (vanilla flavoured)

  • ¼ cup of Milk  

  • 2 tablespoons of Lemon juice

  • A dash of Oil

  • ½ cup of chopped Mango

  • Handful of Mint leaves


Method:



  • Take a metal pudding mould and brush it with oil lightly

  • Put in the mango, sugar, and milk in a grinder and blend them into a smooth purée

  • Next, cook the purée in a pan, and bring it to a boil. Then, lower the heat, allow it to simmer and turn thick

  • Meanwhile, mix custard powder with ¼ cup of milk at room temperature. Mix it well

  • Turn off the heat, then add the custard mixture to the mango purée and keep stirring the mixture for 2 mins to ensure there are no lumps

  • After mixing them properly, switch on the gas and cook the mixture on high heat for approximately 15 mins and becomes thick

  • Then remove it from heat, add lemon juice and mix it well

  • Quickly pour the cooked purée into the greased metal mould and set it to refrigerate for at least 4 hours

  • Then remove the mould from the fridge and place a platter on top to flip it. Tap the mould carefully to loosen the pudding

  • Serve it cold with chopped mangoes and mint leaves

3. Mango Jalapeño Virgin Margarita (By Anand Mishra, F&B Head at Tapas, Jaypee Vasant Continental)


Ingredients:


  • 1 ripe mango (small cubes)

  • 1 oz fresh lime juice

  • 2-3 slices of cucumber

  • 2-3 slices of Jalapeño (remove seeds)

  • Salt for rimming


 

Method:


  • In a shaker, muddle Mango, cucumber and jalapeño slices.

  • Add lime juice.

  • Fill the shaker with ice and shake well.

  • Strain into a salt-rimmed glass filled with ice.
