  • 2 Piece Brinjal
  • 2 Piece Green Chilli
  • 3 Piece Garlic
  • 1 Teaspoon Turmeric Powder
  • 2 Tablespoon Mustard Oil
  • Salt
  • Fresh Coriander

Cooking Instructions

Prick the brinjals with a fork and roast over direct flame. This step can also be done in an oven until the skin chars and the flesh softens.

Step 2

Peel off the charred skin and transfer the soft pulp into a bowl. Mash it lightly with a fork, keeping some texture.

Step 3

Heat mustard oil in a pan, add chopped green chillies and crushed garlic. Saute for 2-3 minutes until fragrant.

Step 4

Add in the mashed aubergine, turmeric, and salt to the pan. Mix it thoroughly and cook on low heat for 5-7 minutes to allow the flavours to meld.

Step 5
