Chhath Puja 2022 Recipes: Vegetable Recipes That You May Try Out During This Festival

On the main day of Chhath Puja, Loki's vegetables/Kohnda or Sita Phal ki Sabjee, gram dal, and rice are cooked without garlic and onions.

Recipe for chhath puja 2022: The celebration of Chhath Puja comes just after Diwali. It started on the 28th of October this year. Chhath Puja is an extraordinary celebration majorly in Bihar, Uttar Pradesh, and Jharkhand states. Chhathi Maiya and the Sun God are worshipped on this day. This is a celebration where all ladies observe a 'Nirjala Fast' for 36 Hours

There are some special vegetable dishes that are cooked during the time of this auspicious festival. Here are the detailed recipes of two special dishes that you may try out this Chhath.

Lauki Ki Sabji:

Ingredients:

  • Bottle Gourd 
  • Ghee
  • Cumin Seeds
  • Turmeric Powder
  • Salt
  • Oil
  • Coriander Powder
  • Red Stew Powder
  • Garam Masala

Preparation:

  • Peel the bottle gourd and cut it into medium pieces. Boil and chop it a bit. For this, keep the cooker on the gas and heat it by adding some ghee.
  • Add cumin seeds and cook till the cumin seeds become light brown. Presently, add 1/4 teaspoon turmeric powder and salt according to taste. Add the bottle gourd to it and blend well, add 1/4 cup of water and close the cooker.
  • Let the bottle gourd boil on low flame. After one whistle from the cooker, put the gas on simmer and let it cook for 5 minutes. After that switch off the gas and let the steam cool down.
  • Put some oil in a dish and when the oil is hot, add some cumin seeds.  Add a spoonful of turmeric powder, coriander powder, red stew powder, garam masala, and salt as required.
  • At the point when the steam of the cooker chills off, take out the bubbled gourd from the cooker and blend it in with the flavours in the dish. Allow the flavours to blend well in it. Cover it and let it cook for 5 minutes.
  • Switch off the gas once it's done. Serve it hot with roti, puri, or naan, and enjoy it.

 

Kohnda or Sita Phal ki Sabji:

  • Ingredients:
  • Pumpkin
  • Green Chilies
  • Oil
  • Fenugreek
  • Asafoetida Seeds
  • Cumin Seeds
  • Ginger
  • Salt
  • Garam Masala
  • Turmeric
  • Chili Powder
  • Amchur Powder
  • Coriander Leaves

Preparation:

  • Heat the oil in a pan, and add fenugreek, asafoetida seeds, and cumin seeds as well. When seeds start to splutter, add some ginger. Remember we can not use onion and garlic in the vegetable.
  • Now add chopped pumpkin and green chilies to the pan, and stir fry until the pumpkin becomes tender.
  • Add salt, garam masala, turmeric, and chili powder, and cook the ingredients over medium flame for 5-6 minutes. Lower the flame and again stir 3-4 times until the ingredients become tender.
  •  Now add some amchur powder from above and cook for a few minutes. Garnish it with coriander leaves and serve hot. It can be enjoyed with rice and daal.
