New Delhi: There are countless methods for cooking seafood, some of which are fast, and healthy, and others which are merely simple. Baking is an excellent technique to prepare seafood with greens, herbs, or spices. Before baking, cover the food in aluminium foil and coat it with oil or butter (especially if you're baking shellfish). To shallow fry rather than deep fry, fully coat your food in batter or breadcrumbs, and then cook it for about 4-5 minutes in only 2-3 tablespoons of oil.


Here are 2 seafood recipes shared by Steven Lee that you can try at home:


1. Tai Tai Prawn:


Ingredients:



  • Prawn Strips

  • Corn Flour

  • Dry Red Chilli

  • Garlic

  • Green Capsicum (Long Cut)

  • Red Capsicum (Long Cut)

  • Schezwan Sauce

  • Water

  • Coriander


Preparation:


1. Add water to corn flour to make the batter for the Prawn Strip fires. Dip the Prawn Strips in the batter and fry them in oil.


2. Heat a wok and add 2 tablespoons of oil to it. Add dry red chilli to the heated oil and fry them for a few seconds.


3. Add garlic to the fried red chillis and stir for a few seconds. Then add a dash of soya sauce to the fried red chilli and garlic. 


4. Stir the mixture and add Schezwan sauce. Mix the sauces well and add the long-cut green and red capsicums. After this, cook the mixture properly.


5. After the mixture is cooked properly, add the already-fried Prawn to the mixture. Stir well and cook it for a few minutes. Garnish it with Coriander leaves.


2. Chow Chu Calamari:


Ingredients:



  • Calamari

  • Flour

  • Cold Sparkling Water

  • Baking Powder

  • Salt

  • Vegetable Oil

  • Green Chillies


Preparation:


1. Cut the calamari into 3 inches size small pieces. Make sure the pieces are approximately equal pieces to cook them evenly.


2. Add salt and baking powder to the flour and mix thoroughly. Then add 2 tbsp of vegetable oil and cold sparkling water to make a semi-liquid batter.


3. Take a deep pot and heat the oil until the temperature reaches 325 degrees.


4. Fry the calamari until it is golden brown.


5. Heat the wok and add 1 tbsp oil. Then add a dash of green chillies. Let it fry for a few seconds. Add the fried calamari and salt to taste.


6. Garnish it with some spring onion and serve it hot.
