New Delhi: Burger- a dish that brings a smile to our faces and has made its way to our regular meals. It often comprises a thick patty that is soft in the middle and crisp on the exterior, a soft, crumbly bread with sesame seeds glued to the top, some mayonnaise, chipotle, mustard atop lettuce, cucumber, roasted tomatoes, and a few olives. Today, they are also a part of first dates, weddings, birthdays, anniversaries, and more. And whether you consider yourself a foodie or not, you must admit that no one can ever have too many burgers.

Here we've compiled some unique burger recipes shared by chefs that can add a different charm to your party altogether.

1. Crispy Fried Burger (by James Patrick, Chef, The Fat Tiger)

Ingredients:

  • Burger Bun- 1pc
  • Butter- 5g
  • Thousand Islands- 20g
  • Salsa- 6g
  • Gherkins- 3g
  • Lettuce- 15g
  • Onion- 10g
  • Tomato- 10g
  • Patty- 1pc
  • Cheese slice- 1
  • Piri piri masala- 2g
  • Iceberg Lettuce
  • Tomato Ketchup

Preparation:

  • To Make This Burger Take a Burger bun and apply some butter on both sides of it.
  • Warm the griller and grill the bun for about a minute.
  • Cook the patty for 3-4 minutes until it's juicy and crispy
  • Take the crown part of the bun and apply some mayo to it. 
  • Place the vegetables and add a cheese slice to it.
  • Place the crispy patty after that.
  • Season the burger and serve hot.

2. Pulled Ghee Roasted Burger (by Kundan Singh, Chef,  Burger Rani)

Ingredients:

  • Coriander seed - 100g
  • Cumin seed -  50g
  • Fennel seed - 50g
  • Black pepper -  10g
  • Cinnamon stick - 50g
  • Black cardamom - 10g
  • Red chilli whole - 50 g
  • Cashew nuts - 100  g
  • Bay leaf - 5g

Preparation:

  • Blend all the above ingredients and prepare a masala. Keep it aside.
  • Take 5-10 grams of ghee in a non-stick pan, add mustard seeds and chopped garlic. Wait until it turns brown, then add chopped onions till it's golden in colour add curry leaves.
  • Add 7.5 grams of the masala prepared earlier. Keep roasting till slightly brownish, and add a pinch of degii Mirch to give that beautiful colour and flavour.
  • Add a bit of water to make sure the masala is not very dry.
  • Take 50 ml of coconut milk & 50 grams of curd, and continue to stir to avoid milk from curdling. Add jaggery paste & imli water to taste.
  • Add 100 grams of boiled mutton (Boneless, shredded). Cover, and keep stirring off and on. Let it simmer to make a dry mixture.
  • Once it cools down, we can start assembling the burger.
  • To do that, use a bun of your choice, preferably a brioche or milk bun. Heat with butter on a pan and garnish with Romaine & Lollo Rosso Lettuce. Then place the mixture which is grilled on high flame.
  • Top it up with Romaine Lettuce and Cheese Slice. Garnish with curry leaf, hung curd and baby spinach.
  • Now the burger is ready to be devoured.

3. The Country Chicken Burger (by Sandipan Ghosh, Junior Application Chef, CYK Hospitalities)

Ingredients:

For Chicken Patty:

  • Minced chicken 
  • One egg yolk 
  • Yellow mustard 
  • Chopped parsley 
  • Salt 
  • Crushed Black Pepper 
  • Cumin powder 
  • Sweet paprika powder
  • Chopped onions 

For Burgers:

  • Applewood bacon 
  • Heirloom tomatoes 
  • Romaine lettuce 
  • Rosemary aioli 
  • Cheddar Cheese slices 
  • Homemade dill pickles 
  • Red onion 
  • Challah bun

Preparation:

  • First, toast the burger with butter.
  • Then, sear the bacon in a skillet.
  • Cook the chicken patty in a skillet with seasonings. Give a good grilled mark from both sides .
  • After that, melt the cheese.
  • To assemble the burger, take a toasted bun
  • Spread rosemary aioli on both sides of the bun.
  • Place lettuce, tomato, and sliced onions.
  • Add chicken patty, homemade dill pickle, and bacon. 
  • Cover it with another side of the bun.
  • Serve it with french fries.
