Chilean Sea Bass
Dice the sea bass fish, cuttlefish, scallion, and water chestnut into small pieces.
Combine all the ingredients with oyster sauce, sesame oil, salt, and sugar to make the filling.
In a bowl, pour 20 ml of hot water, then add 5 grams of potato starch and 10 grams of wheat starch. Knead the mixture until a dough forms.
Take the dough and stuff it with the prepared filling.
Steam the dim sum for 4 minutes.
Decorate the plate with souce and lime; and serve.
