Poila Baishakh 2024 Recipes: Know How To Prepare Ilish Pulao- A Lost Bengali Recipe

Method To Prepare:

Mix salt and turmeric with the fish. Keep aside.

Wash & soak oak rice in water for 30 mins

Heat oil in a flat micro safe dish and fry the fish each side for 3 mins. You can do this part in the gas oven also.

Take a flat micro proof dish and ghee to it. Strain and add to it the left over oil of the fried fish & heat for 2 mins.

Add the whole garam masala, broken mace & bay leaf and micro for 1 min

Add to the vessel, drained rice, salt, sugar, raisins and water and micro for 14 mins covered.

Now add the fried fish and cook covered for another 2-3 mins

Now take out the bowl from the micro and seal it with aluminum foil. Keep sealed for 15 mins as stand time.

After 15 mins add the biresta and slit green chillies and mix lightly so that the hilsa pieces are intact

Ilish Pulao is ready to serve.

For making Biresta:

Wash and drain the onions and mix to it all ingredients well.

Spread it evenly on the crusty plate and micro in 100% power level for 12-15 mins.

Stir in between to avoid getting onions burnt.
