Steps:

For Coconut Rice

- In a saucepan, add olive oil and heat it.
- Add red chillies and saute well.
- Add 85% cooked basmati rice in the pan and mix it well.
- Add the coconut milk in the saucepan, mix well.
- Lastly add chopped herbs, lemon juice, butter, and salt as per requirement.
- Let it cool down and keep it aside for further use.

For Mango Pineapple Salsa

- Mix all the ingredients in a bowl.
- Check for seasoning and keep aside.

For Grilled Fish

- Marinate the fish with salt, pepper.
- Sear the fish on a pan until there is a slight color on both side.
- Put the fish in an oven and bake until cooked.

Steps:

For Coconut Milk Sauce

- In a pan, add water and coconut milk powder.
- Reduce it till thick, check for seasoning.

Assemble:

- At the base, put a ring mold and place coconut rice in it.
- Remove the ring mold and place the grilled fish on top of it.
- Put the mango pineapple salsa on top of the rice and the fish.
- Garnish with micro greens and sesame seeds.
- Serve with a side of coconut milk sauce.
