Bengali Pohela Boishakh 2025 — Know How To Prepare Authentic Bengali Shukto At Home
Shukto is a Bengali vegetable dish made with bitter gourd, potatoes, and other seasonal vegetables. It's flavoured with mustard paste, ginger, and spices, offering a unique bitter-sweet taste.
Ingredients
- 1 Piece Bitter Gourd
- 1 Piece Potato
- 1 Piece Carrot
- 1 Piece Raw Banana
- 1 Piece Pumpkin
- 2 Piece Green Chillies
- 1 Tablespoon Ginger Paste
- 1 Tablespoon Mustard Oil
- 1 Teaspoon Panch Phoron
- 1 Teaspoon Sugar
- 1 Teaspoon Salt
- 2 Tablespoon Milk
- 2 Tablespoon Ghee
- 2 Piece Bay Leaves
- 1 Teaspoon Cumin Seeds
- 2 Piece Dried Red Chillies
- 1 Pinch Asafoetida
Main Procedure
Wash and peel all the vegetables. Then, chop them into small pieces.
Rub the bitter gourd with salt and keep it aside for about 10 minutes. This will remove the bitterness. After that, wash it properly.
Take a pan and heat mustard oil in it. Add in cumin seeds, bay leaves, dried red chillies, and panch phoron. Let the ingredients splutter.
Add in all the chopped vegetables except pumpkin into the pan and saute.
Add turmeric powder, ginger paste, salt, and sugar. Mix everything well and cook for a while.
Pour water in the pan and let it cover all the vegetables. Bring it to boil and simmer for about 15 minutes.
Add the pumpkin pieces and cook for another 5 minutes. Add milk and little ghee for an enhanced flavour.
Garnish your dish with fresh green chillies and serve it with rice.
