Ingredients
- 1 Tablespoon Olive Oil
- 1 Piece Onion (medium, chopped)
- 2 Piece Garlic (minced)
- 1 Piece Carrot (diced)
- 1 Piece Zucchini (diced)
- 1 Cup Green Beans
- 1 Cup Peas
- 1 Piece Potato (medium, diced)
- 1 Cup Spinach Leaves
- 4 Cup Vegetable Broth
- 1 Teaspoon Dried Thyme
- 1 Teaspoon Dried Oregano
- 1 Tablespoon Lemon Juice
- Salt
- Pepper
Main Procedure
Step 1
Take a large pot and heat olive oil in it. Add in onion and garlic and saute it till it's soft.
Step 2
Add carrots, zucchini, green beans, and potatoes. Cook it for a few minutes and stir well.
Step 3
Add in the vegetable broth and bring it to boil. Once it boils, simmer the heat and let the vegetables cook till they become soft.

Once done, add peas, spinach, thyme, and oregano in it. Stir it and cook for another 5 minutes.

Add salt and pepper to the soup according to your taste. Stir in lemon juice for a refreshing taste.
