- 0.5 Cup Chickpeas
- 0.5 Cup Kidney Beans
- 0.5 Cup Black Beans
- 0.5 Cup Cherry Tomatoes
- 0.5 Piece Cucumber (diced)
- 2 Tablespoon Onion (chopped)
- 0.5 Cup Parsley or Cilantro (chopped)
- 2 Tablespoon Olive Oil
- 1 Tablespoon Lemon Juice or Vinegar
- 1 Teaspoon Mustard
- 1 Pinch Red Chilli Flakes
- Salt
- Pepper
Main Procedure
Step 1
Rinse the chickpeas, kidney beans, and black beans properly, and then soak it in water overnight or for about 8 hours.
Step 2
Drain the water and rinse it again. Pressure cook them separately in fresh water for about 4-5 whistles.
Step 3
Take a large bowl and add the cooled and cooked beans in it.
Step 4
Then, add the tomatoes, cucumber, onion, and fresh herbs.
Step 5
Take a small bowl and add in olive oil, lemon juice, mustard, salt, pepper, and chilli flakes. Mix all the ingredients properly.
Step 6
Pour this dressing over the salad and gentle mix to combine all the ingredients.
Step 7
Let it sit for about 10 minutes to enhance the flavours. You can serve it at room temperature or even chilled.
