Holi 2024 Recipes: Know How To Prepare Himanchali Brown Rice Kheer

Soak the black rice for 2 hours. Drain the water and wash the rice thoroughly.

Cook the rice: Add 1 cup of water to the washed rice and cook it like regular rice. You can cook it on the stovetop (which takes around 35 minutes) or use a pressure cooker.

Once the rice is cooked, add milk.

Mix in the cardamom powder, jaggery, and coconut milk. Adjust the sweetness to your liking.

The kheer can be served hot or cold. If serving hot, boil it for 5 more minutes.

If you prefer a mango twist, add mango pulp during mango season and skip the sugar altogether. Brown rice’s natural sweetness pairs beautifully with it.
