How To Perfectly Break An Egg Keeping The Yolk Intact

Select the Right Egg: Fresh eggs are best for keeping yolks intact as the yolks are firmer and less likely to break

Room Temperature Eggs: If possible, use eggs that are at room temperature. Cold eggs are more prone to breakage

Use a flat, clean surface like a countertop or a cutting board. Avoid breaking the egg on the edge of a bowl or pan, as this can cause the yolk to break

Gentle Tap: Hold the egg in one hand and gently tap it against the flat surface to create a small crack

Use Both Hands: Over a bowl or pan, hold the egg with both hands, thumbs near the crack.

Gently pull the two halves of the shell apart. Let the egg white fall away while keeping the yolk in one half of the shell

Carefully transfer the yolk back and forth between the two shell halves, letting the white fall away each time until only the yolk remains.

Be careful to prevent small pieces of shell from getting into the egg. If this happens, use a larger piece of shell to scoop it out.
