Ingredients
- 4 Piece Eggs
- 2 Tablespoon Greek Yogurt
- 1 Teaspoon Mustard
- 1 Piece Onion (chopped)
- 1 Piece Cucumber (diced)
- Parsley (chopped)
- Lemon
- Salt
- Pepper
Main Procedure
Step 1
Take a pot and add water in it. Then, place the eggs, over it with a lid, and bring it to boil. Once the eggs are boiled, remove from heat and set aside.
Step 2
Transfer the eggs in a bowl of cool water. Let them cool down for a while. Once done, peel them and chop into small pieces.
Step 3
Take a large bowl to create the base of the salad. Add Greek yogurt, mustard, lemon juice, salt, and pepper. Mix everything well.
Step 4
Add chopped onions, cucumber, and any other optional veggies. Add the chopped eggs and gently mix everything.
Step 5
You can chill the salad for about 15 minutes to allow the flavours to meld properly. Garnish it with chopped parsley and then serve.
