South Indian Quick And Simple Lemon Rice Recipe
Here's a simple and flavourful lemon rice recipe that's easy to make. With tangy lemon, aromatic spices, and a hint of heat, it's the perfect dish for a quick meal or side.
Ingredients
- 2 Cup Rice (cooked)
- 2 Tablespoon Lemon Juice
- 2 Tablespoon Oil
- 1 Teaspoon Mustard Seeds
- 1 Teaspoon Cumin Seeds
- 3 Piece Green Chillies (slit)
- 8 Piece Curry Leaves
- 2 Piece Dried Red Chillies
- 1 Teaspoon Ginger (grated or finely chopped)
- 1 Tablespoon Peanuts
- 1 Tablespoon Cashews
- 1 Pinch Asafoetida
- 1 Tablespoon Coriander Leaves (chopped)
- Salt
- Turmeric
Main Procedure
Prepare Rice: Cook 2 cups of rice and let it cool down. Fluff it gently to avoid any lumps.
Heat Oil: Take a large pan, heat 2 tablespoons of oil on medium heat.
Tempering: Add mustard seeds and wait for them to splutter. Add in cumin seeds, dry red chillies, asafoetida, and curry leaves.
Add Other Ingredients: Add in green chillies and ginger. Saute for about 30 seconds until fragrant.
Add Turmeric And Dry Fruits: Toss in peanuts and cashews and fry them till they are golden brown. Add Turmeric and mix everything well.
Add Rice: Lower the heat and add in the cooked rice. Mix all the ingredients well to coat the rice with the tempered spices.
Drizzle Lemon Juice: Add lemon juice over the rice and sprinkle salt. Mix gently to combine.
Add Chopped Coriander: Turn off the heat and add chopped coriander leaves to garnish the lemon rice.
