Ingredients

  • 450 Gram Chicken Breast or Thighs (boneless)
  • 1 Piece Medium Onion (diced)
  • 2 Piece Medium Carrots (sliced)
  • 2 Piece Celery Stalks (chopped)
  • 3 Piece Garlic Cloves (minced)
  • 6 Cup Chicken Broth
  • 2 Piece Bay Leaves
  • 1 Teaspoon Thyme
  • 1 Teaspoon Rosemary
  • Parsley (chopped)
  • Salt
  • Pepper

Main Procedure

Step 1

Prepare All The Ingredients: Chop all the vegetables and garlic. You can also cut the chicken into smaller pieces.

Step 2

Cook The Chicken: Take a large pot, heat a little oil in it. Add chicken and cook until it's browned on both the sides for about 5-7 minutes. Remove the chicken and set it aside.

Step 3

Saute The Vegetables: In the same large pot, add the chopped vegetables and celery. Wait for them to soften.

Add Garlic And Seasonings: Add in the garlic, thyme, rosemary, bay leaves, salt, and pepper. Cook for some more time.

Add Chicken Broth: Pour in the chicken broth and bring everything to boil.

Step 6

Shred The Chicken: While the broth is heating, shred the cooked chicken into bite sized pieces.

Step 7

Simmer It Down: Once the broth is boiling, simmer the heat and add in the shredded chicken. Let everything cook properly for another 25-30 minutes, and let the flavours blend in.

Serve: Garnish the soup with fresh parsley and serve hot.
