Ingredients

  • 10 Piece Large Green Chillies
  • 1 Cup Gram Flour (Besan)
  • 2 Tablespoon Rice Flour
  • 0.5 Teaspoon Turmeric Powder
  • 0.5 Teaspoon Red Chilli Powder
  • 0.5 Teaspoon Carom Seeds (Ajwain)
  • Salt
  • Water
  • Oil

Main Procedure

Step 1

Wash the green chillies thoroughly and pat them dry. Slit them lengthwise and remove their seeds if desired.

Step 2

Take a bowl, combine gram flour, rice flour, turmeric, red chilli powder, ajwain, and salt together. Gradually add water to form a thick, smooth batter that can coat the chillies evenly.

Step 3

Take a deep frying pan and heat oil in it. Heat till it's hot but not smoking.

Step 4

Dip each chilli into the batter, ensuring it is evenly coated. Shake off the excess batter before you fry.

Step 5

Place the coated chillies into the hot oil carefully. Fry in batches, turn occasionally, until golden brown and crisp.

Step 6

Remove the fritters with a slotted spoon and place on a kitchen towel to remove excess oil.

Step 7

Serve the Mirchi Bajji with green chutney, tamarind sauce, or ketchup.
