Ingredients

  • 1 Piece Broccoli (florets)
  • 1 Tablespoon Olive Oil or Butter
  • 1 Piece Onion (finely chopped)
  • 2 Piece Garlic Clove (minced)
  • 3 Cup Vegetable Broth
  • 0.5 Cup Milk or Cream
  • Salt
  • Pepper
  • Fresh Parsley

Main Procedure

Step 1

Take a large pot heat olive oil or butter in it. Add chopped onion, garlic, and saute for about 3-4 minutes.

Step 2

Add in the broccoli florets and stir well. Pour in the vegetable broth and bring to simmer. Cook it for 10-15 minutes and wait for it to become tender.

Step 3

Let it cool down and use a blender to puree the soup until smooth. If the soup is too thick add in milk or cream to reach your desired consistency.

Step 4

Season the soup with salt and pepper. Stir it well and heat for another 2-3 minutes.

Step 5

Garnish the soup with fresh parsley and serve it warm.
