Ingredients
- 1 Cup Toor Dal
- 2 Cup Mixed Seasonal Vegetables (drumstick, carrot, radish, pumpkin, brinjal, etc.)
- 2 Piece Tomatoes (medium, chopped)
- 1 Teaspoon Turmeric Powder
- 2 Piece Green Chillies
- 2 Tablespoon Sambar Powder
- 2 Tablespoon Oil
- 1 Teaspoon Mustard Seeds
- 1 Teaspoon Cumin Seeds
- 2 Piece Dried Red Chillies
- 1 Piece Curry Leaf Sprig
- 1 Pinch Asafoetida
- 2 Tablespoon Coriander Leaves
- Tamarind Pulp
- Salt

Main Procedure
Step 1
Cook Dal: Wash toor dal properly and pressure cook it with water and turmeric till it's soft. Once pressure cooked, mash it well.
Step 2
Prepare Vegetables: Boil the vegetables of your choice and add a pinch of salt to it.
Step 3
Make Sambar Base: Take a utensil and combine cooked dal, vegetables, tamarind pulp, tomatoes, green chillies, and sambar powder. Add water to adjust consistency. Bring it to boil and simmer it for 10-15 minutes.
Step 4
Tempering: Heat oil in a pan. Add mustard seeds, cumin seeds, dried red chillies, curry leaves, and asafoetida. Pour this tempering over sambar for an added flavour.
Step 5
Garnish: Sprinkle chopped coriander over the sambar before serving. Serve it hot and enjoy with steamed rice, idli, or dosa.
